Refrigeration controllers
Case, cold room and cabinet controllers run the compressor, defrost and fans from their own air and evaporator probes. Over Modbus they also report the setpoint, alarms and defrost state, which explains a temperature excursion and shows where the energy goes.

A controller probe sits where it controls, not where the food is. For food safety records, add an independent probe at the warmest product position and keep the controller readings beside it.
